Olive Oils & Olives
Each year following vintage, Coriole begins the harvest of our second
passion.... the olive.
Using the principal varieties of ‘Koroneike’ and ‘Frantoio’,
fruit is sourced from the family property and other local growers. Pressed
within a day of picking to achieve superior quality oil.
‘Kalamata’ olives are also harvested to produce a firm
fleshed, low salt, premium eating olive

- Vinegar
- Another feature of the farm production at Coriole is vinegar, two
distinct styles are produced. ‘Red Wine Vinegar’ and a five
year ‘Aged Sweet Vinegar’, made from white pressings boiled
in a cauldron over an open fire.
